- 1/8 teaspoon ground cinnamon, optional

Instructions
- Add the pumpkin purée, pumpkin pie spice, and 1 teaspoon of maple syrup to an 8-ounce glass jar. Stir until smooth and evenly combined.
- Add the rolled oats, chia seeds, plant-based milk, remaining maple syrup, and optional cinnamon.
- Stir thoroughly, scraping the bottom and sides of the jar until no dry oats or pumpkin streaks remain.
- Let the mixture rest for 2 minutes, and then stir again to break apart any chia seed clumps.
- Cover the jar tightly and refrigerate for at least 4 hours or overnight.
- Stir before serving. Add a splash of plant-based milk when you prefer a thinner consistency.
- Top with roasted pecans, dairy-free whipped topping, or additional pumpkin pie spice and serve cold or gently warmed.
