Description

Pumpkin Pecan Cobbler combines a tender pumpkin spice cake with crunchy pecans and a warm caramel sauce that forms underneath as it bakes. Serve this easy fall dessert warm with vanilla ice cream.


Ingredients

  • 1 cup plus 3 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 cup plain pumpkin puree
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted, or vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup granulated sugar, for the topping
  • 1/2 cup packed light brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water
  • Vanilla ice cream and extra pecans for serving, optional

Instructions

  1. Preheat the oven to 350°F. Lightly grease an 8-inch square baking dish with high sides and place it on a rimmed baking sheet.
  2. Whisk the flour, baking powder, salt, 3/4 cup granulated sugar, cinnamon, nutmeg, and cloves in a medium bowl.
  3. Whisk the pumpkin puree, milk, melted butter, and vanilla in a separate bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until no dry streaks remain. The batter will be thick.
  5. Spread the pumpkin batter evenly in the prepared baking dish.
  6. Combine the remaining 1/2 cup granulated sugar, brown sugar, and chopped pecans in a small bowl.
  7. Sprinkle the pecan and sugar topping evenly over the batter.
  8. Slowly pour the very hot water over the entire topping. Do not stir.
  9. Bake for about 40 minutes, until the center looks set and the sauce bubbles around the edges.
  10. Let the cobbler rest for 5 to 10 minutes before serving warm with vanilla ice cream and extra pecans.

Notes

  1. Use plain pumpkin puree, not sweetened pumpkin pie filling.
  2. Do not stir the cobbler after pouring the hot water over the topping.
  3. Place the baking dish on a rimmed sheet pan to catch possible drips.
  4. Toast the pecans before adding them for a deeper nutty flavor.
  5. Store leftovers covered in the refrigerator for up to four days.
  6. Reheat individual servings in the microwave for 20 to 30 seconds.
