Description

Pumpkin Cheesecake Truffles are the ultimate fall treat that beautifully fuses the rich, creamy essence of cheesecake with the warm, inviting flavors of pumpkin and spice. These no-bake delights are perfect for any autumn gathering, from Halloween parties to Thanksgiving celebrations.

Ingredients

Scale
  • 1 tablespoon butter

  • 4 ounces cream cheese, softened

  • 1/2 cup canned pumpkin puree

  • 1 can (14 ounces) sweetened condensed milk

  • 1 1/2 teaspoons pumpkin pie spice

  • 1/2 cup graham cracker crumbs

  • 1/3 cup white chocolate chips

  • Granulated sugar (for rolling)

  • Chocolate chips (for topping)

Instructions

  • In a non-stick skillet over medium heat, melt butter and mix in cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice until thickened.

  • Stir in graham cracker crumbs and white chocolate chips until well combined. Add orange food coloring if desired.

  • Pour the mixture onto a butter-greased baking sheet, spread evenly, and refrigerate for at least 2 hours or overnight until firm.

  • Roll chilled mixture into small balls using buttered hands and coat each ball with granulated sugar.

  • Decorate with ridges using a toothpick and top with chocolate chips to resemble stems.

Notes

Chill fully for best texture.

Use cinnamon sugar for stronger spice.
