Description

Pollo Asado Burritos with citrus marinated chicken, sautéed vegetables, and melted cheese cooked on a flat-top griddle for a bold and satisfying meal.


Ingredients

  • 2 boneless skinless chicken breasts
  • Juice of 1 orange or 1/4 cup orange juice
  • Juice of 1 lime
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 tablespoon citrus garlic mojo seasoning
  • 1 tablespoon olive oil
  • 1/2 red bell pepper diced
  • 1/2 yellow onion diced
  • 1/2 cup corn kernels
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup stewed green chilies
  • Fresh chopped cilantro
  • 2 large flour tortillas
  • 1 1/2 cups shredded cheese
  • Extra lime juice
  • Hot sauce or salsa optional

Instructions

  1. Combine orange juice, lime juice, lemon juice, olive oil, seasoning, salt, and pepper in a bowl or zip bag
  2. Add the chicken and marinate for at least 30 minutes
  3. Preheat a griddle to medium heat
  4. Cook bell pepper, onion, corn, and black beans on the griddle until tender
  5. Stir in green chilies and cook briefly then set vegetables aside
  6. Place the marinated chicken on the hot griddle and cook until golden and fully cooked
  7. Dice the chicken and return it to the griddle
  8. Sprinkle shredded cheese over the diced chicken and mix until melted
  9. Warm tortillas on the griddle
  10. Add vegetable mixture and cheesy chicken to each tortilla
  11. Top with chopped cilantro and a squeeze of lime juice
  12. Roll burritos tightly
  13. Place seam side down on the griddle and toast until golden and crisp
  14. Slice in half and serve hot with salsa or hot sauce

Notes

  1. Marinate the chicken for at least 30 minutes for best flavor
  2. Allow onions to caramelize slightly for extra sweetness
  3. Do not overcook bell peppers so they keep a light crunch
  4. Toast the burritos on the griddle to seal and add crisp texture
  5. Add jalapeños, guacamole, or sour cream for extra flavor
