Description

Soft sugar cookies topped with caramelized pineapple and cherries.


Ingredients

Scale
  • 1 cup butter, room temperature
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup sour cream
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 13 pineapple slices
  • 13 maraschino cherries
  • 1/2 cup butter, melted
  • 1 cup brown sugar

Instructions

  1. Preheat oven to 350°F
  2. Cream butter and sugar until fluffy
  3. Mix in eggs, vanilla, and sour cream
  4. Add dry ingredients and mix into dough
  5. Combine melted butter and brown sugar
  6. Add mixture to pan cavities
  7. Place pineapple and cherry
  8. Top with cookie dough and flatten
  9. Bake for 25 minutes
  10. Cool then flip onto wax paper

Notes

  1. Do not overmix dough
  2. Cool before flipping
  3. Store in airtight container
