Description

A delightful twist on pineapple upside-down cake transformed into soft, buttery sugar cookies with caramelized fruit and cherries.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 egg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 canned pineapple rings
  • 1/2 cup brown sugar
  • 12 maraschino cherries

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper
  2. Cream butter and granulated sugar until light and fluffy
  3. Add egg and mix well, then stir in flour, baking powder, and salt
  4. Spoon brown sugar onto parchment, top with pineapple rings and cherries
  5. Scoop cookie dough over pineapple rings
  6. Bake for 15 minutes until golden and cool before serving
