Description
Fresh pineapple salsa made with juicy pineapple, tomatoes, bell peppers, cilantro, and lime. Perfect as a dip with chips or a topping for grilled chicken and fish.

- 1 whole pineapple (used as serving bowl)
- 1 cup diced pineapple
- 1 cup diced bell peppers
- 1 cup diced Roma tomatoes
- 1/3 cup chopped cilantro
- 1/4 cup minced red onion
- 4 tablespoons lime juice
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
- 1 tablespoon diced jalapenos (optional)
Instructions
- Cut the top third off the pineapple while keeping the stem attached and hollow out the inside to create a serving bowl.
- Dice enough pineapple pieces to measure one cup and reserve the rest for another use.
- Dice the bell peppers and Roma tomatoes into small pieces.
- Finely mince the red onion and chop the cilantro.
- In a bowl combine diced pineapple, tomatoes, bell peppers, red onion, cilantro, lime juice, salt, and black pepper.
- Stir the ingredients gently until evenly combined.
- Add diced jalapenos if desired and mix again.
- Transfer the salsa into the hollow pineapple bowl and serve with chips or as a topping for grilled chicken or fish.
Notes
- Let the salsa rest in the refrigerator for about 30 minutes to allow the flavors to blend.
- The pineapple bowl may not look as fresh the next day, so store leftovers in a regular container.
- Recipe makes about 2 1/2 cups with a serving size of 1/4 cup.
