  • 2 cups graham cracker crumbs

  • 1 (8 oz) tub whipped topping (Cool Whip), thawed
  • 1 (20 oz) can crushed pineapple, drained well

For the Topping:

  • ½ cup shredded coconut (optional)
  • ¼ cup graham cracker crumbs for garnish

Instructions

  • Prepare the Crust:

    • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar.
    • Press the mixture firmly into the bottom of a 9×9-inch or 9×13-inch baking dish.
    • Refrigerate for at least 30 minutes to set.
  • Make the Filling:

    • In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • Gently fold in the whipped topping until fully combined.
    • Stir in the drained crushed pineapple.
  • Assemble the Dessert:

    • Spread the pineapple filling evenly over the chilled crust.
    • Sprinkle with shredded coconut and additional graham cracker crumbs, if desired.
  • Chill and Serve:

    • Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
