Description

Perfected Zucchini Bread is a moist quick bread made with fresh zucchini, brown sugar, vanilla, and pantry staples. It is easy to prepare and perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/2 cups grated zucchini

Instructions

  1. Preheat oven to 350°F and prepare a 9×5-inch loaf pan.
  2. Gently press excess moisture from grated zucchini.
  3. Combine flour, baking powder, baking soda, salt, sugars, oil, vanilla, and eggs in a bowl.
  4. Mix until thick and combined.
  5. Fold in grated zucchini until evenly incorporated.
  6. Pour batter into prepared loaf pan.
  7. Bake for 65 to 75 minutes until a toothpick comes out with moist crumbs.
  8. Tent loosely with foil if the top browns too quickly.
  9. Cool slightly before slicing and serving.

Notes

  1. Do not aggressively squeeze moisture from zucchini.
  2. Use room-temperature eggs for easier mixing.
  3. Store at room temperature for up to 3 days or freeze for up to 3 months.
