Description

Pepper jack crack chicken is a creamy, cheesy, and slightly spicy comfort food made with shredded chicken, cream cheese, ranch seasoning, bacon, and melted Pepper Jack cheese.


Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup shredded Pepper Jack cheese
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup chicken broth (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, chopped

Instructions

  1. Place chicken in slow cooker and season with ranch mix, garlic powder, onion powder, and black pepper
  2. Add chicken broth if using and top with softened cream cheese
  3. Cook on low for 4-5 hours or high for 2-3 hours until chicken reaches 165°F
  4. Shred chicken and return to slow cooker, stirring into cream cheese mixture
  5. Stir in shredded Pepper Jack cheese and crumbled bacon until melted
  6. Garnish with green onions and serve hot

Notes

  1. Serve over rice, pasta, mashed potatoes, or cauliflower rice
  2. Add jalapeños or red pepper flakes for extra heat
  3. Store leftovers in the refrigerator for up to 3 days
