Description

Big, chewy Peanut Butter Oatmeal Chocolate Chip Cookies packed with flavor and tons of chocolate chips.


Ingredients

Scale

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/3 cup granulated sugar

1/2 cup smooth peanut butter

1 large egg

1 1/2 teaspoons vanilla extract

3/4 cup plus 2 tablespoons all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup old-fashioned oats

1 cup chocolate chips, divided


Instructions

1. Preheat oven to 350F. Line cookie sheets with parchment.

2. Beat butter, sugars, and peanut butter.

3. Beat in egg and vanilla.

4. Add flour, baking powder, baking soda, and salt. Mix gently.

5. Stir in oats.

6. Add 3/4 cup chocolate chips.

7. Form dough into 3-tablespoon balls.

8. Place on sheet 2–3 inches apart and bake 10–12 minutes.

9. Cool on sheet for 10 minutes before moving.

Notes

Use smooth commercial peanut butter for best results.

Old-fashioned oats create the perfect chewy texture.

Store cookies in an airtight container for up to 4 days.
