- 3 fresh peaches, peeled and finely diced
- 1 teaspoon raw sugar
- 1 tablespoon cornstarch
- 1 egg white, lightly beaten

- 1 tablespoon milk (optional glaze)
Instructions
- Wash, peel, and finely dice the peaches.
- Mix peaches with sugar and cornstarch in a saucepan.
- Cook over medium-low heat for 5 to 7 minutes until thickened.
- Set the peach filling aside to cool completely.
- Roll puff pastry into a 9×15-inch rectangle.
- Cut the pastry into 6 large squares or 8 smaller squares.
- Preheat oven to 425 degrees Fahrenheit.
- Place 1 to 2 tablespoons of peach filling on each pastry square.
- Fold pastry into triangles and seal edges with a fork.
- Transfer turnovers to a lined baking sheet.
- Brush the tops with egg white.
- Bake for 12 to 15 minutes until golden brown.
- Mix powdered sugar and milk for an optional glaze.
- Drizzle glaze over cooled turnovers before serving.
