Description
Fresh Peach Freezer Jam made with ripe peaches, sugar, lemon juice, and pectin for a quick homemade spread that tastes wonderful on toast, desserts, and crackers.

- 3 cups peeled finely diced fresh ripe peaches
- 1¼ cups granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- ½ cup water
- 1¾-ounce box SURE-JELL fruit pectin
Instructions
- Peel, pit, and finely dice the peaches until you have exactly 3 cups.
- Add peaches, sugar, lemon juice, vanilla extract, and water to a medium saucepan.
- Bring the mixture to a boil over medium-high heat while stirring constantly.
- Cook for 3 minutes before adding the fruit pectin.
- Stir until the pectin fully dissolves and continue boiling for 1 minute.
- Reduce the heat and stir for 1 additional minute.
- Mash the jam with a potato masher or immersion blender until desired consistency forms.
- Ladle the jam into clean jars, leaving ½ inch of space at the top.
- Cool completely at room temperature before refrigerating overnight.
- Freeze the jam after it fully sets.
Notes
- Use ripe but slightly firm peaches for the best texture.
- Measure peaches after chopping for accurate consistency.
- Leave space in jars because the jam expands during freezing.
- Store refrigerated jam for up to 3 weeks or freeze for up to 1 year.
