Description

Buttery oat crumble layered with juicy peaches and baked until golden brown. These peach crumble bars are crunchy, soft, and slightly chewy.


Ingredients

Scale
  • 140 grams all-purpose flour
  • 130 grams rolled oats
  • 155 grams granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 150 grams unsalted butter, melted
  • 450 grams peaches, peeled and diced
  • 30 grams granulated sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350°F and line an 8-inch square pan with parchment paper.
  2. Mix peaches with lemon juice and almond extract.
  3. Add cornstarch and sugar to peaches and stir.
  4. Combine flour, oats, sugar, cinnamon, and salt in a bowl.
  5. Stir melted butter into dry ingredients until crumbly.
  6. Press two-thirds of mixture into prepared pan.
  7. Spread peach filling evenly over crust.
  8. Sprinkle remaining crumble mixture on top.
  9. Bake for 33 to 35 minutes until golden brown.
  10. Cool for 1 hour, then refrigerate for 90 minutes before slicing.

Notes

  1. Use ripe peaches for best flavor.
  2. Leave excess peach liquid behind before filling the crust.
  3. Store in refrigerator up to 5 days.
  4. Freeze up to 3 months.
