Ingredients

- 140 grams all-purpose flour
- 130 grams rolled oats
- 155 grams granulated sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 150 grams unsalted butter, melted
- 450 grams peaches, peeled and diced
- 30 grams granulated sugar
- 2 teaspoons cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon almond extract
Instructions
- Preheat oven to 350°F and line an 8-inch square pan with parchment paper.
- Mix peaches with lemon juice and almond extract.
- Add cornstarch and sugar to peaches and stir.
- Combine flour, oats, sugar, cinnamon, and salt in a bowl.
- Stir melted butter into dry ingredients until crumbly.
- Press two-thirds of mixture into prepared pan.
- Spread peach filling evenly over crust.
- Sprinkle remaining crumble mixture on top.
- Bake for 33 to 35 minutes until golden brown.
- Cool for 1 hour, then refrigerate for 90 minutes before slicing.

- Use ripe peaches for best flavor.
- Leave excess peach liquid behind before filling the crust.
- Store in refrigerator up to 5 days.
