Ingredients

- 1 tablespoon fresh lemon juice
- 2 tablespoons salted butter
- 1/2 cup light brown sugar
- 4 teaspoons cornstarch
- 1/2 teaspoon ground cinnamon

- 10 egg roll wrappers
- 2 tablespoons water
- Vegetable oil for frying
- Powdered sugar for dusting
- 3/4 cup powdered sugar
- 1/2 teaspoon vanilla bean paste
- 2 to 3 tablespoons milk
- Pinch of salt
Instructions
- Combine peaches, lemon juice, butter, brown sugar, cornstarch, and cinnamon in a saucepan.
- Cook until thickened, then stir in vanilla extract and cool completely.
- Place filling into egg roll wrappers and seal with water.
- Heat oil to 350 degrees Fahrenheit.
- Fry egg rolls until golden brown and crispy.
- Drain on a wire rack and dust with powdered sugar.
- Whisk powdered sugar, milk, vanilla bean paste, and salt to make dipping sauce.
- Serve warm with vanilla bean sauce.
Notes
- Use canned peaches if fresh peaches are unavailable.
- Air fry at 380 degrees Fahrenheit for 15 minutes if preferred.
- Use vegan butter and vegan wrappers for a vegan dessert option.
