Creamy cheesecake layered with roasted peaches and cinnamon streusel on a graham cracker crust.
Ingredients

- 10 medium peaches
- 5 tbsp granulated sugar
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup salted butter melted
- 3 cups graham cracker crumbs
- 2/3 cup brown sugar
- 1 cup + 2 tbsp all-purpose flour
- 32 oz cream cheese
- 1 1/2 cups granulated sugar
- 4 large eggs
- 3/4 cup sour cream
- 1 tbsp vanilla extract
- 1 1/2 tsp cornstarch
Instructions
- Roast seasoned peaches until tender.
- Bake graham cracker crust for 10 minutes.
- Prepare and bake cinnamon streusel.
- Beat cream cheese and sugar until smooth.
- Mix in eggs one at a time.
- Add sour cream vanilla and cornstarch.
- Layer batter peaches and streusel.
- Add remaining batter and smooth top.
- Bake cheesecake in water bath.
- Cool gradually then refrigerate overnight.
- Top with fresh roasted peaches and remaining streusel.
- Slice and serve.
Notes
- Use room temperature ingredients.
- Do not overmix after adding eggs.
- Chill overnight for best texture.
