Description

Creamy cheesecake layered with roasted peaches and cinnamon streusel on a graham cracker crust.


Ingredients

Scale
  • 10 medium peaches
  • 5 tbsp granulated sugar
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup salted butter melted
  • 3 cups graham cracker crumbs
  • 2/3 cup brown sugar
  • 1 cup + 2 tbsp all-purpose flour
  • 32 oz cream cheese
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 3/4 cup sour cream
  • 1 tbsp vanilla extract
  • 1 1/2 tsp cornstarch

Instructions

  1. Roast seasoned peaches until tender.
  2. Bake graham cracker crust for 10 minutes.
  3. Prepare and bake cinnamon streusel.
  4. Beat cream cheese and sugar until smooth.
  5. Mix in eggs one at a time.
  6. Add sour cream vanilla and cornstarch.
  7. Layer batter peaches and streusel.
  8. Add remaining batter and smooth top.
  9. Bake cheesecake in water bath.
  10. Cool gradually then refrigerate overnight.
  11. Top with fresh roasted peaches and remaining streusel.
  12. Slice and serve.

Notes

  1. Use room temperature ingredients.
  2. Do not overmix after adding eggs.
  3. Chill overnight for best texture.
  4. Store refrigerated for up to 6 days.
