  • 4 small–medium chicken breasts (or 2 large, halved)

  • Salt and pepper, to taste

  • 2 tbsp olive oil

Crispy Coating:

  • ½ cup grated Parmesan cheese

  • ½ cup panko breadcrumbs

Creamy Garlic Sauce:

  • 34 cloves garlic, minced

  • 1 cup light or heavy cream

  • 1 tbsp Italian seasoning (or oregano)

  • ½ cup Parmesan cheese, grated

  • 1 cup spinach, chopped (optional)


Instructions

  1. Prepare the Chicken

    • Season chicken breasts with salt and pepper.

    • In a shallow dish, combine Parmesan and panko. Press both sides of chicken into the mixture for a firm coating.

  2. Sear the Chicken

    • Heat olive oil in a skillet over medium-high heat.

    • Sear chicken for 3–4 minutes per side until golden and crispy. Remove and set aside.

  3. Make the Sauce

    • Reduce heat to medium-low. Add minced garlic and sauté for 1 minute until fragrant.

    • Stir in cream, Italian seasoning, and spinach (if using).

    • Add Parmesan and simmer until sauce thickens slightly.

  4. Finish Cooking

    • Return chicken to skillet, cover, and simmer for 8–10 minutes until chicken is cooked through (165°F/74°C).

  5. Serve

    • Plate chicken, spoon creamy garlic sauce over the top, and serve immediately.

Notes

Don’t overcrowd the pan—work in batches if needed for crispier chicken.

Heavy cream makes a richer sauce; light cream works if you prefer lighter.

Double-dip chicken for extra crunch (first in flour, then Parmesan-panko mix).

Rest chicken for 2–3 minutes before serving to keep it juicy.

Store chicken and sauce separately for best texture when reheating.
