Ingredients
For the Chicken:
-
4 small–medium chicken breasts (or 2 large, halved)
-
Salt and pepper, to taste
-
2 tbsp olive oil
Crispy Coating:
-
½ cup grated Parmesan cheese
-
½ cup panko breadcrumbs
Creamy Garlic Sauce:
-
3–4 cloves garlic, minced
-
1 cup light or heavy cream
-
1 tbsp Italian seasoning (or oregano)
-
½ cup Parmesan cheese, grated
-
1 cup spinach, chopped (optional)
Instructions
-
Prepare the Chicken
-
Season chicken breasts with salt and pepper.
-
In a shallow dish, combine Parmesan and panko. Press both sides of chicken into the mixture for a firm coating.
-
-
Sear the Chicken
-
Heat olive oil in a skillet over medium-high heat.
-
Sear chicken for 3–4 minutes per side until golden and crispy. Remove and set aside.
-
-
Make the Sauce
-
Reduce heat to medium-low. Add minced garlic and sauté for 1 minute until fragrant.
-
Stir in cream, Italian seasoning, and spinach (if using).
-
Add Parmesan and simmer until sauce thickens slightly.
-
-
Finish Cooking
-
Return chicken to skillet, cover, and simmer for 8–10 minutes until chicken is cooked through (165°F/74°C).
-
-
Serve
-
Plate chicken, spoon creamy garlic sauce over the top, and serve immediately.
-
Notes
Don’t overcrowd the pan—work in batches if needed for crispier chicken.
Heavy cream makes a richer sauce; light cream works if you prefer lighter.
Double-dip chicken for extra crunch (first in flour, then Parmesan-panko mix).
Rest chicken for 2–3 minutes before serving to keep it juicy.
Store chicken and sauce separately for best texture when reheating.
