Ingredients
-
4 tbsp unsalted butter
-
1 small yellow onion, finely diced
-
2 garlic cloves, minced
-
¼ cup all-purpose flour
-
2 cups vegetable stock
-
2 cups half-and-half or whole milk
-
3 cups fresh broccoli florets, chopped small
-
1 cup carrots, shredded or julienned
-
1 tsp garlic powder
-
½ tsp cayenne pepper (optional)
-
1 tsp salt (or to taste)
-
½ tsp ground black pepper
-
1 ½ cups sharp cheddar cheese, shredded
-
1 cup Velveeta cheese, cubed
Instructions
-
Melt butter in a large pot over medium heat. Sauté onion for 3–4 minutes until softened. Add garlic and cook 1 minute.
-
Sprinkle in flour and whisk for 2 minutes to create a golden roux.
-
Slowly whisk in vegetable stock, then half-and-half, ensuring a smooth mixture. Simmer gently for 5 minutes.
-
Stir in broccoli and carrots. Cover and simmer for 15–20 minutes until tender.
-
Season with garlic powder, salt, pepper, and cayenne (if using).
-
Reduce heat to low and add cheddar and Velveeta. Stir until melted and creamy.
-
Taste and adjust seasoning as needed. Serve hot in bowls or bread bowls.
Notes
Chop broccoli small for even cooking and better texture.
Shred cheddar yourself for smoother melting—pre-shredded cheese contains anti-caking agents.
Avoid boiling after adding cheese to prevent graininess.
For a thicker soup, simmer uncovered a bit longer to reduce.
To make vegetarian, use vegetable stock and omit Velveeta or swap for more cheddar.
