Description

Pancake Mini Muffins are fluffy, bite-sized pancake bites baked in a mini muffin pan with blueberries, strawberries, or mini chocolate chips. They are perfect for quick breakfasts, kids’ meals, brunch trays, and make-ahead mornings.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon cane sugar
  • 1 cup whole milk
  • 3 tablespoons butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Mini chocolate chips, for topping
  • Diced strawberries, for topping
  • Blueberries, for topping
  • Nonstick cooking spray
  • Maple syrup, for serving

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and grease a 24-cup mini muffin tin with nonstick cooking spray.
  2. Whisk together the flour, baking powder, and salt in a mixing bowl.
  3. In a separate bowl, whisk together the cane sugar, whole milk, melted butter, egg, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients and stir gently with a rubber spatula just until combined.
  5. Fill all 24 mini muffin cups evenly with batter.
  6. Top each cup with your choice of mini chocolate chips, diced strawberries, blueberries, or leave some plain.
  7. Bake for 10 to 12 minutes, or until the tops look set and a toothpick inserted in the center comes out clean.
  8. Let the muffins rest in the pan for 2 to 3 minutes.
  9. Remove the muffins carefully from the pan and serve warm with maple syrup for dipping.

Notes

  1. Do not overmix the batter, or the muffins may turn dense.
  2. Dry berries well before adding them so the centers do not become too moist.
  3. Use mini chocolate chips for the best topping distribution.
  4. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  5. Freeze cooled muffins in a freezer bag and reheat as needed for quick breakfasts.
