Description

A rich, moist paleo chocolate chip zucchini cake made with almond flour, coconut flour, cocoa powder, shredded zucchini, and dark chocolate chips.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup coconut sugar
  • 1/2 cup dark chocolate chips
  • 1 1/2 cups shredded zucchini
  • 3 large eggs, separated
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon apple cider vinegar
  • Coconut oil, for greasing the pan

Instructions

  1. Preheat the oven to 350°F and grease a 9×9-inch cake pan with coconut oil.
  2. Shred the zucchini and set it aside.
  3. Separate the eggs, placing yolks in one bowl and whites in another clean bowl.
  4. In a large bowl, stir together almond flour, cocoa powder, coconut flour, baking soda, sea salt, coconut sugar, and dark chocolate chips.
  5. In a medium bowl, whisk shredded zucchini, egg yolks, almond milk, vanilla extract, and apple cider vinegar.
  6. Whip the egg whites until soft peaks form.
  7. Pour the wet zucchini mixture into the dry ingredients and stir quickly until combined.
  8. Gently fold in the whipped egg whites without deflating them.
  9. Pour the batter into the prepared pan and bake immediately for 45 minutes.
  10. Test the center with a toothpick. The cake should feel set, although melted chocolate chips may leave streaks.
  11. Cool before slicing and serving.

Notes

  1. Bake the batter right away after combining wet and dry ingredients so the cake rises well.
  2. Do not overmix after folding in the egg whites.
  3. For lower sugar, reduce the chocolate chips by half.
  4. Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
