Description

Overnight Breakfast Casserole is a hearty make-ahead dish with sausage, eggs, cheese, and bread soaked in rich custard overnight. Perfect for holidays, brunches, or busy mornings when you want a flavorful breakfast ready to bake.


Ingredients

  • 1 pound breakfast sausage

  • 8 jumbo eggs

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon cayenne pepper (optional)

  • 1/2 teaspoon ground mustard

  • 1 teaspoon dried sage

  • 1/2 teaspoon dried chives or 1 tablespoon fresh chives

  • 2 cups half-and-half

  • 1 1/2 cups yellow shredded sharp cheddar cheese

  • 1 cup extra sharp white cheddar cheese

  • 10 slices butter bread or sandwich bread, cubed


Instructions

  • Cook and crumble sausage until browned; drain excess grease.

  • Whisk eggs, salt, pepper, cayenne, mustard, sage, chives, and half-and-half in a large bowl.

  • Layer cubed bread, sausage, and cheeses in a buttered 13×9-inch baking dish.

  • Pour custard evenly over the top, pressing lightly to submerge the bread.

  • Cover and refrigerate overnight.

  • The next day, preheat oven to 350°F and allow casserole to sit at room temperature.

  • Bake for 45–50 minutes until golden and set.

  • Let rest 5 minutes before serving.

Notes

Substitute pork sausage with turkey or chicken for a lighter version.

Add vegetables such as bell peppers, mushrooms, or spinach for extra flavor.

Use different breads like sourdough or French bread for varied texture.

Make it vegetarian by skipping the sausage and increasing the vegetables.
