Description

A rich and flavorful tomato sauce made from oven-roasted cherry tomatoes that freezes beautifully for future meals.


Ingredients

Scale
  • 5 cups cherry tomatoes
  • 1/4 cup olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 teaspoons dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Wash and dry the cherry tomatoes after removing stems.
  3. Place tomatoes in a single layer on a roasting pan or baking sheet.
  4. Drizzle with olive oil and season with onion powder, garlic powder, salt, and pepper.
  5. Bake for 45 minutes until the skins wrinkle and tomatoes soften.
  6. Allow tomatoes to cool slightly.
  7. Blend roasted tomatoes in a food processor until smooth.
  8. Run the sauce through a food mill to remove skins and seeds.
  9. Stir in dried oregano and adjust seasonings if needed.
  10. Serve immediately or refrigerate or freeze for later use.

Notes

  1. Store sauce in the refrigerator for up to one week.
  2. Freeze in mason jars, freezer-safe containers, or freezer bags.
  3. Leave room for expansion when freezing in jars.
