Description
Outdoor Cowboy Stir Fry is a hearty skillet meal made with smoked sausage, crispy potatoes, and colorful vegetables cooked quickly on a griddle or skillet for a bold and satisfying dinner.

- 1 lb smoked sausage sliced
- 2 medium Yukon Gold potatoes diced
- 2 medium zucchini sliced
- 1 medium onion chopped
- 1 medium red bell pepper chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp oil for cooking
- Fresh parsley for garnish
Instructions
- Preheat a Blackstone griddle or large skillet over medium high heat for 3 to 5 minutes and add 1 tablespoon oil.
- Add diced potatoes and season with garlic powder onion powder smoked paprika black pepper and salt then cook 10 to 12 minutes stirring occasionally until golden.
- Push potatoes to one side and add remaining oil then cook sliced smoked sausage for about 5 minutes until browned.
- Add chopped onion red bell pepper and zucchini then stir and cook another 5 to 7 minutes until vegetables are tender but still crisp.
- Taste and adjust seasoning then remove from heat and garnish with fresh parsley before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a skillet with a small splash of water or oil to prevent drying.
