- 1 loosely packed cup Italian 00 flour or all-purpose flour (130g)
- 2 tablespoons caster sugar
- 2 teaspoons baking powder
- Zest of 1 orange
- 1 tablespoon orange juice
- 1 cup ricotta cheese (250g)
- 2 large eggs
- 1 pinch salt
- 4 cups sunflower oil
- Powdered sugar for dusting
- 1/4 cup honey
- 1 teaspoon fresh thyme leaves
- 1 teaspoon warm water
Instructions
- Heat sunflower oil in a heavy-bottomed pot to 355°F.
- Whisk ricotta, eggs, orange zest, and orange juice until smooth.
- Mix flour, sugar, baking powder, and salt in another bowl.
- Fold dry ingredients into wet ingredients until a sticky dough forms.
- Mix honey, thyme, and warm water together for the drizzle.
- Drop spoonfuls of dough into hot oil in small batches.
- Fry doughnuts for about 5 minutes until golden brown.
- Drain on paper towels.
- Drizzle with honey thyme mixture and dust with powdered sugar before serving.

- Use a thermometer for consistent frying temperature.
- Do not overcrowd the pot while frying.
- Fresh orange zest gives the best flavor.
