Description

Caramelized Onion Roasted Garlic Bisque is warm, comforting, rich, creamy, and veggie-filled while staying fairly light on calories.

Ingredients

Scale

1 large whole garlic head

1 ½ tablespoons olive oil, divided use

9 cups (about 4 large) thinly sliced sweet onions

2 ½ cups (about 2 medium) sliced leeks, light green and white parts only

1 teaspoon salt, divided use

1 teaspoon dried thyme

2 tablespoons all-purpose flour

1/3 cup dry white wine

4 cups vegetable broth

2 cups milk

Fresh thyme leaves for garnish

Freshly ground black pepper for garnish

Instructions

1. Preheat oven to 350° F.

2. Remove papery outer skin from garlic head and coat with ½ tablespoon oil. Wrap in foil and bake 1 hour. Cool 10 minutes, peel cloves, and set aside.

3. Heat remaining oil in a large pot over medium heat. Add onions and leeks; cook uncovered 30 minutes. Add ½ teaspoon salt and thyme. Cook 30 minutes more until dark and golden, adding water if needed.

4. Stir in flour and cook 1 minute. Add wine and broth; bring to a boil. Reduce heat and simmer 30 minutes.

5. Blend roasted garlic with remaining salt and cooked onion mixture until smooth. Return mixture to pot.

6. Add milk and simmer 8 minutes until heated. Garnish with thyme and pepper.

Notes

For deeper flavor, cook onions slowly and stir often.

Soup thickens as it cools; thin with broth if desired.
