Description

This old fashioned pear jam recipe creates a rich homemade preserve with fresh pears, sugar, and lemon juice.

Ingredients

Scale
  • 4 pounds pears, peeled and chopped into 1/2-inch pieces
  • 3 cups granulated sugar
  • 1/4 cup lemon juice

Instructions

  1. Peel, core, and chop the pears into even 1/2-inch pieces.
  2. Combine pears, sugar, and lemon juice in a large bowl.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Prepare water bath canner and sterilize jars if canning.
  5. Transfer pear mixture into a heavy-bottomed pot.
  6. Bring to a boil over medium-high heat while stirring often.
  7. Reduce heat slightly and cook for 10 to 15 minutes.
  8. Mash some pears gently if desired for texture.
  9. Cook until jam reaches 220°F or passes the wrinkle test.
  10. Ladle hot jam into jars leaving 1/4-inch headspace.
  11. Seal jars and process in boiling water bath for 10 minutes.
  12. Cool jars completely and store properly.

Notes

  1. Use ripe but firm pears for the best texture.
  2. Stir frequently near the end of cooking to prevent burning.
  3. Fresh lemon juice gives brighter flavor.
  4. Store opened jars in the refrigerator for up to 3 weeks.
