Description

Soft baked Neapolitan cookies with chocolate, vanilla, and strawberry layers in one delicious tri-color dessert.


Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup sugar
  • 1 egg + 1 egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 tablespoons flour (strawberry layer)
  • 1 tablespoon strawberry jam
  • 1/2 teaspoon almond extract
  • food coloring
  • 1 1/2 tablespoons cocoa powder
  • 1 ounce melted chocolate

Instructions

  1. Mix dry ingredients
  2. Cream butter and sugar
  3. Add eggs and vanilla
  4. Combine wet and dry
  5. Divide dough into three
  6. Flavor each portion
  7. Layer dough in pan
  8. Chill for 3 hours
  9. Slice evenly
  10. Bake at 350F for 12 minutes

Notes

  1. Chill dough thoroughly
  2. Use gel food coloring
  3. Store in airtight container
  4. Freeze up to 3 months
