Description

Mystical Witch Soup is a comforting fall recipe brewed with earthy root vegetables, warming spices, and a swirl of creamy coconut milk. This vegan, chunky, and slightly creamy soup is a magical blend of rustic flavors and nourishing ingredients that’s perfect for chilly evenings. Ingredients

  • 1 tbsp olive oil

  • 1 red onion, finely chopped

  • 3 garlic cloves, minced

  • 1 parsnip, peeled and diced

  • 2 carrots, peeled and sliced

  • 1 cup butternut squash, cubed

  • 1 small purple sweet potato, peeled and chopped

  • 1 tsp dried thyme

  • 1/2 tsp ground allspice

  • 1/2 tsp ground turmeric

  • 5 cups vegetable broth

  • 1 bay leaf

  • 1/4 cup fresh parsley, chopped

  • Salt and pepper, to taste

  • 1/2 cup coconut milk (optional, for creaminess)


Instructions

  • Heat olive oil in a large pot over medium heat. Add red onion and cook for about 4 minutes until softened.

  • Add garlic and sauté for 1 minute until fragrant.

  • Stir in the parsnip, carrots, butternut squash, and sweet potato. Toss to coat with aromatics.

  • Add thyme, allspice, and turmeric. Cook for 1 minute to release the spices’ aroma.

  • Pour in vegetable broth and add the bay leaf. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.

  • Remove bay leaf and stir in coconut milk, if using. Use an immersion blender to partially blend for a creamy yet chunky texture.

  • Season with salt and pepper to taste. Stir in parsley and serve hot.

Notes

Purple sweet potatoes add color and natural sweetness, but orange or white work too.

For thicker soup, blend more. For chunkier, blend less or not at all.

Add cayenne or chili oil if you prefer a little heat.

Garnish with toasted pumpkin seeds, coconut cream swirls, or croutons.
