Description

Healthy Morning Glory Muffins packed with carrots, zucchini, apple, coconut, pecans, and whole grains. Perfect for breakfast or snacks.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 Granny Smith apple, peeled and grated
  • 3/4 cup raisins (optional)
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans
  • 3 large eggs
  • 1/2 cup applesauce
  • 1/2 cup oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F and prepare a 16-cup muffin pan.
  2. Combine flours, sugar, baking soda, cinnamon, and salt in a large bowl.
  3. Add zucchini, carrots, apple, raisins, coconut, and pecans.
  4. Whisk eggs, applesauce, oil, and vanilla in a separate bowl.
  5. Combine wet and dry ingredients until just mixed.
  6. Fill muffin cups nearly to the top.
  7. Bake 30 to 35 minutes until a toothpick comes out clean.
  8. Cool for several minutes before serving.

Notes

  1. Soak raisins in hot water for 10 minutes before adding for softer texture.
  2. Do not overmix the batter.
  3. Store in an airtight container for best freshness.
