Description

Extra moist zucchini bread with cinnamon, vanilla, and crunchy walnuts. Makes two delicious loaves.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 3 large eggs
  • 2 cups grated zucchini
  • 3/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1 1/2 cups chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F and prepare two 8×4-inch loaf pans
  2. Whisk flour, sugar, baking soda, cinnamon, and salt
  3. Beat eggs and mix with zucchini, oil, and vanilla
  4. Stir dry ingredients and nuts into wet mixture just until combined
  5. Divide batter between pans
  6. Bake 50 to 60 minutes until a toothpick comes out clean
  7. Cool 5 minutes in pans then transfer to a wire rack

Notes

  1. Use 8×4-inch loaf pans
  2. Do not squeeze moisture from zucchini
  3. Store at room temperature for 2 days
  4. Freeze wrapped loaves for up to 1 year
