Description

Apple zucchini bread is a moist, spiced quick bread that combines the tender texture of zucchini with the sweet bite of apples. Filled with warm cinnamon, crunchy walnuts, and comforting flavor, this zucchini apple loaf is a wholesome treat for breakfast, dessert, or anytime snacking.

Ingredients

Scale
  • 1 cup white sugar (200 g)

  • 1 cup brown sugar (200 g)

  • 3 large eggs

  • 1 cup vegetable oil (or half oil, half applesauce)

  • 3 tsp vanilla extract

  • 3 cups all-purpose flour (375 g)

  • 3 tsp ground cinnamon

  • 1 tsp salt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 cups grated zucchini (approx. 250 g)

  • 1 medium apple (approx. 125 g), peeled and diced

  • 1 cup chopped walnuts (120 g)

Instructions

  1. Preheat oven to 325°F (165°C). Grease two 8×4-inch loaf pans or six mini pans.

  2. Grate zucchini and dice the peeled apple; set aside.

  3. In a large bowl, whisk flour, salt, baking powder, baking soda, and cinnamon.

  4. In another bowl, beat eggs, oil, vanilla, and both sugars until smooth.

  5. Stir wet mixture into dry ingredients just until combined.

  6. Fold in zucchini, apple, and walnuts. Let batter rest 5 minutes.

  7. Divide into pans and bake for 40–60 minutes (35–40 for minis), until a toothpick comes out clean.

  8. Cool 10 minutes in pans, then transfer to a wire rack to cool completely.

Notes

No need to peel the zucchini.

Dice the apple small to avoid soggy spots.

Replace half the oil with applesauce for a lighter texture.

Toast the walnuts for added depth and crunch.

Freezes well—great for meal prep or gifting.
