Description

A smooth and slightly tart mixed berry cake filling made with frozen berries, perfect for cakes and cupcakes.


Ingredients

Scale
  • 2 ½ tablespoons Instant Clearjel or 2 tablespoons cornstarch
  • 100 grams (½ cup) sugar
  • 8 ounces (227 grams) frozen mixed berries
  • 1 ½ tablespoons lemon juice

Instructions

  1. Whisk sugar and thickener together in a small bowl
  2. Combine frozen berries and lemon juice in a skillet
  3. Cook on medium heat until berries thaw and begin to simmer
  4. Break berries into small pieces while cooking
  5. Add thickener mixture and stir until thickened
  6. Cool completely before using as filling

Notes

  1. Instant Clearjel creates a thicker and glossier texture
  2. Cornstarch may separate slightly after storage so stir before use
  3. Pipe a buttercream border before adding filling to cakes
  4. Store in refrigerator up to 2 weeks
