  • 4 small flour or corn tortillas

  • 1 cup refried beans

  • 1/2 lb ground beef (or turkey/chicken/plant-based)

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 cup red enchilada sauce

  • 2 tbsp taco sauce

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup shredded Monterey Jack or Mexican cheese blend

  • 1/4 cup diced tomatoes

  • 2 tbsp chopped green onions

  • 1 tbsp sliced black olives

  • 1 tbsp sliced jalapeños

  • Vegetable oil (for frying or brushing tortillas)


Instructions

  • Crisp the tortillas:

    • Fry method: Heat oil in a pan. Fry tortillas until golden and crispy, 1–2 minutes per side.

    • Bake method: Bake at 375°F (190°C) for 8–10 minutes, flipping halfway.

  • Cook the meat:

    • In a pan, cook ground meat over medium heat until browned.

    • Add chili powder, cumin, garlic powder, and onion powder. Stir to coat evenly.

  • Assemble the pizza:

    • Spread refried beans on one tortilla.

    • Add a layer of seasoned meat.

    • Top with the second tortilla.

    • Spread enchilada sauce and taco sauce on top.

    • Sprinkle shredded cheeses over the sauce.

  • Bake:

    • Place on a baking sheet and bake at 375°F (190°C) for 10 minutes, or until cheese melts.

  • Add toppings:

    • Top with diced tomatoes, green onions, olives, and jalapeños.

  • Serve:

    • Slice and enjoy it hot with your favorite sides or sauces.
