Description

A hearty Mexican ground beef and potato skillet loaded with smoky spices, green chiles, and melted cheese. Ready in 35 minutes!


Ingredients

Scale

2 tbsp avocado oil

1 lb potatoes (cubed)

1 lb lean ground beef

1/2 cup diced yellow onion

1 red bell pepper, diced

Kosher salt & pepper to taste

4 oz diced green chiles

2.5 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/4 cup cilantro, chopped

1/2 cup shredded cheese


Instructions

1. Heat oil in skillet and cook potatoes until golden, about 6 minutes.

2. Add beef, onion, and bell pepper. Season with salt and pepper and cook through.

3. Add green chiles, spices, and cilantro. Stir and cook until potatoes are tender.

4. Top with cheese and cook until melted. Serve hot with extra cilantro.

Notes

Try adding jalapeños for extra heat or serve with warm tortillas.
