- 1 pound ground beef
- 1 can (14.75 ounces) cream-style corn
- 1 cup frozen corn
- 1 can (10 ounces) diced tomatoes and green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 box (8.5 ounces) Jiffy cornbread mix
- 2 eggs
- 1/3 cup whole milk
Instructions
- Preheat oven to 375°F.
- Brown ground beef in a cast iron skillet and drain grease.
- Add cream-style corn, frozen corn, diced tomatoes with chilies, and taco seasoning. Cook 5 minutes.
- Sprinkle 1 cup cheddar cheese over beef mixture.
- Mix cornbread mix, eggs, and milk in a bowl.
- Spread batter evenly over beef mixture.
- Bake 20-25 minutes until golden brown.
- Top with remaining cheese and bake 5 more minutes until melted.
- Cool slightly before serving.
