Description

This mouthwatering Mexican Cornbread Casserole features layers of seasoned ground beef, sweet corn, bold spices, and gooey cheddar cheese topped with a golden cornbread crust.


Ingredients

  • 1 pound ground beef
  • 1 can (14.75 ounces) cream-style corn
  • 1 cup frozen corn
  • 1 can (10 ounces) diced tomatoes and green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy cornbread mix
  • 2 eggs
  • 1/3 cup whole milk

Instructions

  1. Preheat oven to 375°F.
  2. Brown ground beef in a cast iron skillet and drain grease.
  3. Add cream-style corn, frozen corn, diced tomatoes with chilies, and taco seasoning. Cook 5 minutes.
  4. Sprinkle 1 cup cheddar cheese over beef mixture.
  5. Mix cornbread mix, eggs, and milk in a bowl.
  6. Spread batter evenly over beef mixture.
  7. Bake 20-25 minutes until golden brown.
  8. Top with remaining cheese and bake 5 more minutes until melted.
  9. Cool slightly before serving.

Notes

  1. Customize with jalapenos, onions, or black olives.
  2. Serve with sour cream, salsa, or guacamole.
  3. Store leftovers up to 3 days in refrigerator.
  4. Add cayenne or hot sauce for extra heat.
