Description

Mexican Corn Dip is a creamy, cheesy appetizer made with sweet corn, lime juice, and mild spices, perfect for quick parties and gatherings.


Ingredients

  • 2 cans whole kernel corn, drained
  • 1 can chopped green chilies
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 cup Cotija or feta cheese, crumbled
  • 2 tablespoons cilantro or parsley, chopped
  • 1 lime, juiced
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, mix mayonnaise, sour cream, green chilies, garlic powder, chili powder, lime juice, salt, and half of the cheese
  2. Add drained corn and stir until fully combined
  3. Sprinkle remaining cheese and chopped cilantro on top and gently toss
  4. Serve immediately or refrigerate until ready to serve

  2. Substitute sour cream with Greek yogurt if desired
