- 1 can chopped green chilies
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1 cup Cotija or feta cheese, crumbled
- 2 tablespoons cilantro or parsley, chopped
- 1 lime, juiced
- 1/2 teaspoon salt
Instructions
- In a large bowl, mix mayonnaise, sour cream, green chilies, garlic powder, chili powder, lime juice, salt, and half of the cheese
- Add drained corn and stir until fully combined
- Sprinkle remaining cheese and chopped cilantro on top and gently toss
- Serve immediately or refrigerate until ready to serve

- Substitute sour cream with Greek yogurt if desired
