Description

Mediterranean Chicken Bowls made with quinoa, grilled chicken, fresh vegetables, and a creamy lemon-dill yogurt sauce.


Ingredients

Scale
  • 1 lb boneless skinless chicken breasts
  • 1 cup quinoa
  • 1 cucumber diced
  • 1 pint cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 1/4 cup crumbled feta cheese
  • 1 lemon juiced
  • 1/4 cup fresh dill chopped
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • Salt pepper and oregano to taste

Instructions

  1. Marinate chicken with olive oil lemon juice oregano salt and pepper and rest 30 minutes
  2. Rinse and cook quinoa according to package directions
  3. Grill or bake chicken until cooked through then rest and slice
  4. Prepare vegetables by dicing and slicing
  5. Mix Greek yogurt lemon juice dill salt and pepper to make sauce
  6. Assemble bowls with quinoa chicken vegetables olives feta and sauce

Notes

  1. Store sauce separately for best texture
  2. Reheat chicken and quinoa gently before serving
