These mashed potato cheese puffs transform leftover mashed potatoes into crispy, cheesy bites that are perfect as an appetizer, snack, or quick side dish.

- 2 cups leftover mashed potatoes
- 1 cup shredded cheese (cheddar, mozzarella, or similar)
- 1/2 cup all-purpose flour
- 1 large egg
- Salt to taste
- Black pepper to taste
- Optional chopped chives or parsley
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
- In a large bowl combine mashed potatoes, shredded cheese, flour, egg, salt, and pepper
- Mix gently until all ingredients combine into a thick mixture
- Scoop portions of the mixture and shape into small balls about the size of a golf ball
- Place the balls evenly on the prepared baking sheet
- Bake for 20–25 minutes until golden brown and crispy on the outside
- Remove from oven and let cool slightly before serving warm
Notes
- Mix ingredients only until combined so the puffs stay light
- Shape the puffs in uniform size so they cook evenly
- Chill the mixture for 30 minutes if it feels too soft to shape
- Use parchment paper to prevent sticking and help browning
- Try different cheeses or spices for additional flavor
