Chicken & Pasta

  • 1 1/2 lbs boneless skinless chicken, cut into 1-inch pieces

  • 10 oz penne pasta

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 Tbsp olive oil

Creamy Sun-Dried Tomato Sauce

  • 3 Tbsp butter

  • 2 tsp garlic, minced

  • 3 Tbsp flour

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1 cup grated parmesan cheese

  • 1 cup sun-dried tomatoes, drained

  • 1 tsp paprika

  • 2 tsp Italian seasoning

  • Fresh basil, chopped (for garnish)


Instructions

  • Cook pasta according to package directions. Drain and set aside.

  • Season chicken with salt and pepper. Heat olive oil in a skillet, cook chicken 6–8 minutes until golden and cooked through. Remove and set aside.

  • In the same skillet, melt butter. Add garlic and sauté 30 seconds. Stir in flour and whisk into a paste.

  • Slowly whisk in chicken broth and heavy cream. Stir until smooth and slightly thickened.

  • Add parmesan, sun-dried tomatoes, paprika, and Italian seasoning. Simmer 2–3 minutes.

  • Return chicken and pasta to the skillet. Toss to coat in sauce.

  • Garnish with basil and extra parmesan. Serve warm.

Notes

Don’t overcook chicken; juicy bites make the dish shine.

Drain sun-dried tomatoes to avoid excess oil.

Freshly grated parmesan gives the best melt and flavor.

Add crushed red pepper flakes for heat.

Best served fresh—reheat gently with cream or broth if needed.
