Ingredients
-
2 1/4 cups all-purpose flour
-
1 tsp baking soda
-
1/2 tsp salt
-
1 cup unsalted butter, softened
-
3/4 cup granulated sugar
-
3/4 cup light brown sugar
-
2 large eggs
-
1 tsp vanilla extract
-
1/2 tsp almond extract
-
1 cup maraschino cherries, chopped and well-drained
-
1 1/2 cups chocolate chips (semi-sweet or dark)
-
Optional: Pink gel food coloring, white chocolate chips, chopped nuts (walnuts or pistachios)
Instructions
-
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
-
In a small bowl, whisk flour, baking soda, and salt. Set aside.
-
Beat butter, granulated sugar, and brown sugar in a large bowl until light and fluffy (about 2 minutes).
-
Add eggs, one at a time, then mix in vanilla and almond extracts.
-
Gradually add the dry ingredients to the wet mixture and stir until combined.
-
Gently fold in maraschino cherries and chocolate chips.
-
Scoop tablespoon-sized dough balls, roll into balls, and place on the prepared baking sheet, spacing 2 inches apart.
-
Bake for 10-12 minutes, until edges are golden and centers are set.
-
Cool on the baking sheet for a few minutes, then transfer to wire racks to cool completely.
Notes
Be sure to drain and pat dry the maraschino cherries to prevent the dough from becoming too wet.
To make thicker cookies, chill the dough for 30 minutes before baking.
Experiment with different extracts, like cherry extract, for a stronger cherry flavor.
Optional: Add nuts or white chocolate chips for extra texture and flavor.
