- 1/2 cup chopped baby spinach
Instructions
- Preheat oven to 360°F (180°C) and grease a 12-cup muffin pan.
- Whisk tomato purée, olive oil, and egg together until smooth.
- In a separate bowl whisk flour, baking powder, salt, and Italian herbs.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Fold in cheese, ham, and spinach.
- Divide batter evenly among muffin cups.
- Optionally sprinkle extra cheese on top.
- Bake for 15 to 20 minutes until golden and cooked through.
- Cool slightly and serve.
Notes
- Store in an airtight container for up to 3 days.
- Freeze for up to 4 months.
- Use pepperoni, chicken, mushrooms, olives, or bell peppers as variations.
- Do not overmix the batter.
