Description

Lime Gelatin Salad is a creamy, nostalgic dessert that blends lime-flavored gelatin with crushed pineapple, whipped cream, cream cheese, and chopped pecans. This sweet-tart, fluffy salad is perfect for holiday spreads, potlucks, or retro-themed dinners—easy to make, delightfully festive, and always a crowd favorite.


Ingredients

  • 240 ml boiling water

  • 1 package (170 g) lime flavored gelatin mix

  • 1 can (567 g) crushed pineapple, drained (reserve juice)

  • 1 package (225 g) cream cheese, softened

  • 480 ml heavy cream

  • 1 cup (110 g) chopped pecans


Instructions

  1. In a bowl, dissolve gelatin in boiling water. Stir well.

  2. Add 120 ml reserved pineapple juice to the gelatin. Mix and refrigerate for 1 hour until slightly thickened.

  3. Simmer pineapple and remaining juice for 5 minutes, then cool.

  4. Beat cream cheese into partially set gelatin until smooth. Stir in cooled pineapple.

  5. Whip heavy cream to soft peaks and fold into gelatin mixture.

  6. Fold in chopped pecans.

  7. Pour into a mold or bowl and chill at least 4 hours until set.

Notes

Let gelatin partially set before adding cream cheese to avoid lumps.

Fully cool pineapple mixture before combining.

Garnish with maraschino cherries or extra pecans for a festive touch.

Not freezer-friendly; store in the fridge for up to 3 days.
