- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 3 cups frozen peas
- 1 cup heavy or whipping cream
- Juice and zest of 1 lemon
- 1/2 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- 1 pound (500 g) pasta of your choice
- 1 tablespoon olive oil
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente.
- Heat olive oil in a large skillet over medium heat and sauté the onion until soft and translucent.
- Add the garlic and cook for 1 minute until fragrant.
- Stir in the peas and lemon zest and cook until the peas are heated through.
- Pour in the cream and simmer until the sauce thickens and coats the back of a spoon.
- Add half the lemon juice, season with salt and pepper, and adjust acidity to taste.
- Drain the pasta, reserving 1 cup of cooking water.
- Add the pasta to the sauce along with the Parmesan cheese.
- Gradually add reserved pasta water and stir until the pasta is creamy and glossy.
- Serve immediately with extra Parmesan and lemon wedges if desired.
