- 2 chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon, juice and zest
- 3 cloves garlic, minced
- 1 tbsp fresh thyme or 1 tsp dried
- 1 tbsp fresh oregano or 1 tsp dried
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, olive oil, lemon, herbs, and garlic.
- Sear chicken in a hot skillet for 4–5 minutes per side until golden.
- Remove chicken and sauté garlic for 30 seconds.
- Add rice and stir to coat in the flavors.
- Pour in chicken broth and lemon juice, scraping up browned bits.
- Nestle chicken on top, cover, and simmer for 20–25 minutes.
- Rest for 5 minutes before serving with fresh herbs or lemon slices.
Notes
- If rice dries out, add a splash of broth.
- For extra flavor, deglaze the pan with a bit of white wine.
- Let the dish rest before serving to help the rice absorb remaining liquid.
