Description

A bright and comforting one-pan meal made with tender chicken, fluffy rice, fresh lemon, garlic, and herbs. Easy to prepare and perfect for busy weeknights.


Ingredients

Scale
  • 2 chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon, juice and zest
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme or 1 tsp dried
  • 1 tbsp fresh oregano or 1 tsp dried
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt, pepper, olive oil, lemon, herbs, and garlic.
  2. Sear chicken in a hot skillet for 4–5 minutes per side until golden.
  3. Remove chicken and sauté garlic for 30 seconds.
  4. Add rice and stir to coat in the flavors.
  5. Pour in chicken broth and lemon juice, scraping up browned bits.
  6. Nestle chicken on top, cover, and simmer for 20–25 minutes.
  7. Rest for 5 minutes before serving with fresh herbs or lemon slices.

Notes

  1. If rice dries out, add a splash of broth.
  2. For extra flavor, deglaze the pan with a bit of white wine.
  3. Let the dish rest before serving to help the rice absorb remaining liquid.
