Description

Creamy lemon chicken gnocchi made in one pan with tender chicken, soft gnocchi, Parmesan cheese, and fresh spinach.


Ingredients

Scale
  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon pepper seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and black pepper, to taste

Instructions

  1. Slice chicken breasts in half lengthwise and season both sides.
  2. Heat olive oil and butter in a skillet and sear chicken until cooked through, then set aside.
  3. Lower heat and cook garlic briefly in the same skillet.
  4. Add chicken broth and lemon juice, scraping the pan.
  5. Stir in cream and gnocchi and simmer until gnocchi is tender and sauce thickens.
  6. Remove from heat and stir in Parmesan and spinach.
  7. Return chicken to the skillet, season to taste, and serve.

Notes

  1. Do not pre-cook the gnocchi, as it thickens the sauce while cooking.
  2. Use freshly grated Parmesan for the smoothest sauce.
  3. Chicken is done when it reaches 165°F internally.
