- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon toasted sesame oil
- 1/4 cup potato starch, cornstarch, or all-purpose flour
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sesame seeds
- 1/2 teaspoon gochugaru or red pepper flakes
Instructions
- Slice zucchini into 1/4-inch rounds and trim ends
- Salt both sides and rest for 10 minutes
- Pat zucchini dry with paper towels
- Coat slices with starch or flour
- Whisk eggs with sesame oil
- Heat oil in a skillet over medium heat
- Dip coated zucchini into egg mixture
- Fry 2 to 3 minutes per side until golden
- Transfer to a rack or paper towels
- Mix dipping sauce ingredients and serve
