Ingredients

Scale

For the crackers:

  • 125 g (1 ¼ cups) almond flour

  • 8 g (1 tablespoon) flaxseed meal

  • 1 teaspoon (1 g) dried thyme

  • ½ teaspoon (2 g) sea salt

  • 45 ml (3 tablespoons) water

For serving:

  • 4 Babybel cheese rounds

  • 120 ml (½ cup) macadamia nuts or almonds

  • 120 ml (½ cup) sliced cucumbers (optional)

  • 120 ml (½ cup) cherry tomatoes (optional)

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Mix almond flour, flaxseed meal, thyme, and salt in a bowl. Add water and stir to form a dough.

  3. Roll dough between two pieces of parchment paper.

  4. Remove top parchment and cut dough into 1-inch squares.

  5. Transfer to a baking sheet and bake for 20–25 minutes, checking at 18 minutes.

  6. Let cool for 30 minutes, then separate crackers.

  7. Assemble snack boxes with crackers, cheese, nuts, and optional veggies.

Notes

Flavor crackers with garlic powder, rosemary, or chili flakes for variety.

Crackers can be made ahead and stored for up to a week.

For same-day snacking, add a dip like guacamole or ranch.

Use compartment containers to keep crackers crisp if adding fresh veggies.
