Ingredients

  • 4 boneless, skinless chicken thighs

  • 2 cups mushrooms (cremini or button), sliced

  • 1/2 cup heavy cream

  • 1/4 cup chicken broth

  • 2 tbsp butter or olive oil

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme or rosemary

  • Salt and pepper, to taste

  • 1/4 cup Parmesan cheese (optional)


Instructions

  • Trim excess fat from chicken thighs. Season with salt and pepper on both sides.

  • Heat butter or olive oil in a large pan over medium-high heat. Add chicken thighs and sear for 4-5 minutes on each side until golden and crispy. Remove chicken from the pan and set aside.

  • In the same pan, add garlic and sliced mushrooms. Sauté for 3-4 minutes until the mushrooms soften.

  • Pour in chicken broth to deglaze the pan, scraping up any brown bits.

  • Add heavy cream and bring to a simmer. Let it cook for a few minutes until the sauce thickens.

  • Stir in fresh herbs, salt, and pepper. Add Parmesan cheese, if using.

  • Return chicken thighs to the pan, coating them with the creamy mushroom sauce. Let everything simmer for an additional 5-7 minutes.

  • Serve hot and enjoy!

Notes

For a dairy-free version, substitute heavy cream with coconut cream.

You can use chicken breasts instead of thighs, but they may cook a bit faster.

Adding spinach or kale enhances the dish with extra greens.
