Main Sliders:

3 pounds (1.36 kg) boneless, skinless chicken thighs

3 tablespoons (45 ml) olive oil, divided

1/2 cup (120 ml) ketchup

1/2 cup (120 ml) Sriracha chili sauce

1/2 cup + 2 tablespoons (150 ml) honey, divided
-
1/2 cup (120 ml) water
-
3 tablespoons (45 ml) lime juice
-
2 teaspoons (4 g) grated lime zest
-
2 teaspoons (4 g) minced garlic
-
1 teaspoon (2 g) ground ginger
-
1/4 teaspoon (0.5 g) black pepper

12 mini pretzel buns, split
-
12 slices part-skim mozzarella cheese, halved
-
1/4 to 1/2 teaspoon (0.5–1 g) crushed red pepper flakes

Coarse salt, optional

2 green onions, chopped

Sriracha-Lime Dipping Sauce:

1 cup (240 ml) reduced-fat mayonnaise
-
2 tablespoons (30 ml) Sriracha chili sauce
-
2 tablespoons (30 ml) lime juice
-
2 teaspoons (4 g) grated lime zest

Instructions

Heat 1 tbsp olive oil in a Dutch oven over medium heat. Brown chicken for about 5 minutes.

Mix ketchup, Sriracha, 1/2 cup honey, water, lime juice and zest, garlic, ginger, and black pepper in a bowl. Pour over chicken. Bring to a boil, reduce heat, cover, and simmer for 25–30 minutes.

Remove the chicken and shred it. Simmer the sauce until thickened (about 5 minutes). Return the chicken to the sauce and mix well.

Preheat oven to 375°F (190°C). Place bottom halves of pretzel buns in a greased 13×9-inch baking dish.

Layer each with half a slice of cheese, chicken, another half a slice of cheese, and a top bun.

Mix the remaining two tablespoons of olive oil, two tablespoons of honey, and red pepper flakes. Brush over the tops. Sprinkle coarse salt, if using.

Bake 10–15 minutes until golden and cheese is melted.

Garnish with green onions. Mix all dipping sauce ingredients and serve with sliders.
Notes
Pretzel buns hold up well to saucy filling.
Adjust spice by changing red pepper flake levels.
Make chicken ahead and assemble fresh for easy prep.
Use thighs for the best texture, but breasts also work.
Store leftovers wrapped in foil or container up to 3 days.
