- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- Juice of 2 fresh limes
- Zest of 1 lime
- 2 fresh jalapenos finely chopped
- 2 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 2 cups corn kernels
- 2 tablespoons butter
- 2 tablespoons chopped cilantro
Instructions
- Slice the chicken breasts horizontally to create thinner pieces for even cooking
- Mix olive oil lime juice lime zest chopped jalapenos garlic salt pepper chili powder and paprika in a bowl
- Add chicken to the marinade and coat well
- Let the chicken marinate for about 15 minutes
- Heat a griddle to medium high heat
- Place the chicken on the hot griddle and cook about 5 to 6 minutes per side until fully cooked
- Move chicken to one side of the griddle
- Add butter and corn kernels to the griddle and cook while stirring
- Cook the corn until lightly toasted and tender
- Sprinkle chopped cilantro over the chicken and corn
- Serve hot directly from the griddle
